Sigri plantation, situated in the Western Highlands Province of Papua New Guinea, is one of the most distinguished arabica grown in PNG, wild yet refined. Many coffee brokers refer to a bright, clean, well-processed PNG as "Sigri-like".

This medium-light roast PNG Sigri specialty coffee has an aroma of caramelized sugars, malt and dark spices fragrance in the cup, there is flavour of caramel nut bar with a hint of apricots, a smooth high body followed by low acidity, and a clean finish.
Works well with an espresso machine.

PNG Coffee is in many ways untamed and unpredictable. Traditionally grown in gardens, not farms, these small plantations account for 85% of the country’s coffee production and exports – meaning it can be difficult to find a grower who can reliably provide quality beans.
All coffee bearing the Sigri name is grown at over 5000 feet in the glorious, fertile, volcanic soil of the Waghi Valley in the Western Highlands. Sigri does not use any artificial chemical substances, pesticides or herbicides in the cultivation process. Sustainability and conservation are a top priority for Sigri estates, which employ a medium-density shade strategy using two types of shade trees. This promotes even ripening of the coffee cherries and provides habitat for over 90 beautiful, native bird species.
Quality control begins in the field where cherry beans are hand-picked and carefully checked for uniformity, it must be red and fully ripe, which allows for the correct balance of sugar and acid within the cherry. This cheery is then pulped on the day of picking and begins a rigorous wet factory process. This begins with the fermentation process, a period of three days broken every 24 hours by washing.

The popular ratios for espresso is 1:2 (1 gram of coffee to every 2 grams of water).

There is no such thing as a "Golden" ratio, but well-balanced cups of coffee are consistently brewed around a certain ratio. This is a good place to start, if you like stronger taste, you might use a 1:14 ratio. If you like a normal taste, you might pour 1:16 or 1:17.
