Why Do Some Coffees Have More Chaff?

Is this a defect?
Short answer: No.
In fact, in many cases, it’s a sign you’re drinking high-quality coffee.
Let’s break down why.
What Is Chaff?
Chaff, also known as silverskin, is a natural part of the coffee bean. It’s a thin layer that clings to the seed inside the coffee cherry.
During roasting, most of this layer detaches and is carried away by airflow. However, not all coffees behave the same way—and that’s where things get interesting.
Why Some Coffees Have More Chaff
1. High Altitude = Higher Density
Coffees grown at higher elevations develop more slowly. This leads to:
- Denser bean structure
- Tighter cellular formation
- Stronger attachment of silverskin
As a result, coffees from high-altitude regions are more likely to retain some chaff.
2. Light Roasting Preserves Structure
Light roasts use less heat and shorter development time compared to darker roasts.
That means:
- Less expansion of the bean
- Less force to dislodge silverskin
- More of the original structure remains intact
In darker roasts, chaff is more likely to burn off or separate completely. In light roasts, it often stays attached until grinding.
3. Processing Method Matters
Washed coffees—especially those processed gently—tend to maintain a cleaner, tighter structure.
In some origins, processing is more intensive (with longer fermentation or soaking), which can weaken the silverskin and make it easier to remove during roasting.
In others, the process is more delicate, meaning the chaff remains more intact.
4. Variety and Structure Differences
Not all coffee varieties behave the same way.
Some beans have a more brittle structure, allowing chaff to break off easily during roasting. Others are more flexible or uneven in structure, which can cause chaff to cling longer and become more noticeable—especially after grinding.
Why You Notice It More When Grinding
Even if chaff doesn’t fully detach during roasting, it often loosens.
So when you grind the coffee:
- The mechanical action releases the chaff
- It becomes visible in the grounds
- Static can make it cling to your grinder or container
This is why some coffees seem to “produce” more chaff at the grinding stage.
Is More Chaff a Bad Thing?
Not at all.
In fact, coffees that show more chaff often share these characteristics:
- High altitude growth
- Light roast profiles
- Minimal processing
- Preserved origin character
In other words, they’re often the coffees chosen for their clarity, complexity, and expression of origin.
Does Chaff Affect Taste?
In most brewing methods, chaff has little to no impact on flavor.
It’s extremely light and typically separates during brewing or remains insignificant in the final cup.
If anything, the presence of chaff is simply a visual or handling difference—not a taste issue.
A Different Way to Look at It
Instead of seeing chaff as something “extra,” it can be helpful to think of it as:
A visible trace of how the coffee was grown, processed, and roasted.
Coffees that are heavily processed or roasted darker may look “cleaner”—but they also lose some of the subtle characteristics that make specialty coffee unique.
